Coconut oil is actually much more stable in very high cooking temperatures than any (lard comes close) vegetable oils on the market. It won't break down chemically and it won't react with sugar, starch and oil such as french fries or potato chips, creating a cancer causing chemical compound called acrylamide. Potato chips and french fries manufacturer should use coconut oil since a cancer causing chemical won't be a problem when compared to what they are doing now.
And also, can the internal portion of the coconut oil be taken by cooking your food with the oil....i mean does one have to drink the oil
Moderation is best, mix it in ordinary cooking as a replacement for vegetable oils. Most people in health tend to over do this. It is best to start slowly and learn from them. Ted
