Most bacteria can be classified into two large groups based on the physical properties of their walls :
1) gram-positive
2) gram-negative
There is book available in the net titled "Manufacture of Yogurt and other Functional dairy products" by Fatih Yildiz. There is a section in the book called " Antimicrobial Effect of Keir". In that section, it is mentioned the greatest antimicrobial activity of kefir exhibited against the following Gram-positive microbes:
1) Staphylococcus Aureus
2) Staphylococcus Epidermidis
3) Pseudomonas Aeruginosa
4) Proteus Vulgarios
5) Klebsiella Pneumonia
6) Bacillus Subtilis
Kefir has inhibitory power against the following Gram-negative microbes:
1) E. Coli
2) Salmonella
3) Shigella Flexneri
4) Shigella Sonneri.
