The gluten in wheat or allergen was damaging the pancreas, inflammation, that killed the beta cells in the pancreas, which leads to diabetes. In certain patients, they over react to the thing which causes even type 1 diabetes, in severe cases. Besides wheat is acidic anyway, and in the bromine process to make wheat white you get iodine deficiency.

Dairy is a bit different. Farmers add bovine growth hormone in the cows to produce more milk, and that result in bovine growth hormones, and other antibiotics to show up in milk, which leads to autoimmune reactions in general. The growth hormone fuels cancer growth, in theory. If milk is healthy, you should not get bad breath after consuming it, but one usually does. It doesn't happen with raw milk, grass fed. There's also contamination of mycobacterium in 60% of all milk products, which leads to ulcerative colitis and Crohn's disease, which can be very debilitating, some last a lifetime of suffering.
