Question about the life of enzymes in fresh vegetable juice

Timh or others...... got a question about the life of the enzymes in freshly juiced vegetables. I know heat kills them at 120 degrees and they die with time. Refrigeration delays this, but not long. Recently, I read that vacuum sealing and refrigeration would delay this several days. We have an old vacuum sealer but not the jar sealing kind. What say yee?
