This year all the vinegar is forming a blue & white mould on the surface, something I don't recall seeing before. This mould developed early on, just a few days after juicing. Is my vinegar ruined? Or is it salvageable if I let it continue to ferment?

This has happened to me too! I think its because I forgot to make sure the apples were under the surface of the liquid! Did u find an answer? I'm searching for the answer too!Replied by Mariam (Spain ) on 05/11/2018
You get mold when brewing ACV if the temperature is too cold. Try to put the batch in your kitchen, close to the refrigerator and completely cover with a cheese cloth to avoid the sun light.if you leave in a place with cold temperatures, try to brew it in spring or summer.
