I don't know when the tradition started but... "Ambrosia" is a fruit salad which includes coconut and has been served at Thanksgiving in the South for many, many years.

From what I've heard, I think baking with coconut oil--pure or not--may be preferable to using butter, which is what I do now (except for those few recipes that use a liquid oil, then I use canola).

While the hunt for the genetic basis of Alzheimer's and Parkinson's continues, and 'cure' in the form of foetal cell transplant turned into nightmare, senior NIH scientist Richard Veech is developing a promising approach that will involve dietary intervention.

A team, headed by Richard Veech, senior scientist in the United States National Institutes of Health (NIH), has made discoveries that may lead to a simple, effective treatment for Alzheimer's and Parkinson's diseases. A molecular shunt that feeds into the core metabolic cycle, can protect cultured neurons from the kinds of damages involved in those neurodegenerative diseases [1]. Veech was in exuberant, confident mood when I met him recently at a special workshop on the biophysics of aging, convened by gerontologist Dr. Walter Bortz in Berkeley.

Alzheimer's disease affects 5 million and Parkinson's disease about 500,000 in the United States. The incidence of Alzheimer's is expected to increase as the population ages, as its prevalence rises from 2.5% of those at 65 years of age to 47% of those over 85 years of age. Patients lose recent memory; the neurotransmitter acetylcholine decreases in the brain, and neurons die in the part of the brain known as the hippocampus, where the protein fragment, Ab1-42, accumulate in characteristic plaques (patches).. Alzheimers disease is generally regarded as multi-factorial. Approximately 20% of cases appear related to abnormalities of Ab1-42 metabolism associated with genetic defects mapped to chromosome 1, 14, 19 or 21. That leaves at least 80% associated with other factors, which include brain trauma, ischemia (decreased blood flow) insulin resistance, or impairment of brain energy metabolism.

Parkinson's disease symptoms include muscle rigidity and tremor of the hands, and is diagnosed by aggregates of the proteins asynuclein and ubiquitin in neurons, and death of neurons that use the neurotransmitter dopamine in the part of the brain known as substantia nigra. The disease can be associated with genetic abnormalities, environmental toxins or infections, and can be treated, at least temporarily, by the drug L-dopa. Experimentally, a syndrome indistinguishable from Parkinson's disease can be induced by the heroin analogue, 1-methyl-4-phenylpyridinium (MPP ), which is taken up by the dopamine transporter protein into the neurons. In the neurons, MPP inhibits the activity of NADH dehydrogenase, the first enzyme of the 'electron transport chain' in the mitochondria, which oxidises the metabolic products of glucose in a core cycle of reactions  the tricarboxylic acid (TCA) cycle - that extract energy to power all living activities.

The brain uses a disproportionately large amount of energy for its weight, and it needs to extract it directly from glucose. The brain is unable to use fatty acids (breakdown products of fats) or amino acids (breakdown products of proteins), which can enter the TCA cycle through branch points in other tissues. A metabolite the brain can use is ketones, which can feed directly into the TCA cycle.

Richard Veech's team found that ketones protect neurons from both MPP , which induces Parkinsons disease, and the protein fragment Ab1-42, which accumulates in the brain of Alzheimers patients. Not only that, addition of ketones alone actually increased the number of surviving neurons from the hippocampus, suggesting that ketones may even act as growth factors for neurons in culture.

The team's work goes back to the 1990s, when they started using 'metabolic control analysis' (see Box 1) to study glucose metabolism in working rat hearts perfused with glucose, to which ketones or insulin or both have been added [2]. Insulin is a hormone that reduces glucose concentration in the blood, and deficiency of insulin is associated with type I diabetes.

Today however, I managed to make a 100% smooth no clump smoothie! I put coconut oil in a cup and placed it in a bowl of hot water to melt it and then smushed my fruit (just strawberries today) into the oil and added it to the food processor. Processed until completely smooth and THEN added my cold ingredients ( vanilla bean coconut milk ice cream and 1 crushed up ice cube for extra coldness. ) Result was as smooth as yogurt and delicious! Coconut oil has really been a cure all for me. I've lost a little weight even though my fat intake is obviously higher since I haven't changed anything else in my diet, my nails are stronger and look more clear, and the stubborn cystic acne I get around my jawline have all flattened out. The redness is still there, but with makeup on you can't even tell and no new zits have popped up and my skin looks better now than it has since I started getting cystic acne about 4 years ago. Finally being able to use evco in smoothies is just gonna make it better!

Fungal infections are frequently not responsive to classical antifungal therapy. Considering the enormous emphasis on the antifungal properties of the fatty acids of the coconut oil, thus the coconut oil, in scientific literature; the natural and the non toxic nature of coconut oil; the knowledge acquired from a previous research; mfonfu oil, extracted from coconut was administered orally twice daily at a dose of 5ml to HIV/AIDS patients as treatment against fungal meningo-encephalitis. 

All patients were taking antiretrovirals (ARV); those who were not on ARV were placed on ARV in the following week, except for the patient who was in coma. 

The rapid recovery of the patients to treatment with coconut oil was spectacular and miraculous with the major symptoms and signs disappearing generally within the first month of starting treatment with mfonfu oil; indicating that coconut oil treats fungal meningo-encephalitis in HIV/AIDS patients, and that coconut oil is a very formidable, powerful and effective antifungal. Coconut oil will constitute the corner stone in the treatment of fungal meningo-encephalitis in HIV/AIDS patients. 

Nevertheless, the only treatment for HIV/AIDS remains prevention of the infection, because there is no specific medication against HIV yet. 

The setting of the research was in Bamenda from October 2007 to March 2008, at St Mary Soledad Catholic Health Centre.

The only objective sign observed in all the patients was oropharyngeal candidiasis (thrush); it is thus the pathognomonic sign in fungal meningitis and encephalitis in HIV/AIDS patients.


Oropharyngeal candidiasis in an HIV/AIDS patient should indicate the risk of developing fungal meningitis and encephalitis. Memory loss was also one of most declared symptoms. The diagnosis of fungal meningitis was presumptive; only one was positive for Cryptococcus neoformans. The early diagnosis and treatment of fungal meningitis and encephalitis in HIV/AIDS patients with mfonfu oil (coconut oil) should be based on clinical approach by the presence of neurological and mental disorders, and oropharyngeal candidiasis. The recovery rate within the first two weeks of treatment with mfonfu oil (coconut oil) was 91.2% while the fatality rate was 8.8%.


This operational research confirms the effectiveness of mfonfu oil (coconut oil) in the treatment of fungal meningitis and encephalitis in HIV/AIDS patients. Mfonfu oil (coconut oil) would be used sooner or later to treat fungal meningitis and encephalitis in HIV/AIDS patients; it is effective, available, and cheap; and it is a revolutionary discovery for humanity! 

Nevertheless educational campaigns for the prevention HIV infection are still paramount because there is not yet any specific medication against HIV.

The use of coconut oil (mfonfu oil) for the early treatment of fungal meningitis and encephalitis, supplementing ARV therapy, will greatly prolong the lives of HIV/AIDS patients.All efforts contributing positively to the fight against HIV/AIDS from the top to the bottom and from the bottom to the top of the health pyramid such as this discovery should be highly considered and appreciated.

I managed to get from my local health shop today, Unrefined pure coconut oil, I do hope this is the correct one. The texture of it is like lard. Do I just take a teaspoon full chew then to swallow it, or is it just a pinch first to see if I have any adverse reactions to it. I bought it because I have gingivitis I am also taking CoEnzyme Q-10 30mg 3 times a day. Any feedback would be gratefull thanks.

So, while considering giving this a try, I remembered that I still have a whole gallon of virgin coconut oil that my Dad bought, after much research on it's benefits, he never used it at all. You know, he was "old school". I believe he likely opened it, saw it as a gallon of really pricey fat, not quite remembering all the good claims it had made to it's use... Felt rather ashamed he'd probably been ripped off... Through no one's fault but his own, and closed it back up thinking... "~no way! ~"
The thing is... This was a few years ago. He has since passed, &amp; adding that my daughter is highly allergic to coconut, I just felt it was better left alone, for the time being. (to rot?) OK, my daughter has now moved out. This gallon of fine virgin fat has been with me this whole time. I have been storing this gallon of (quite expensive) coconut oil, .. And yes, still I have it, sitting on the floor of my pantry. 
OK, so I just now finally opened it up... yes, in the middle of writing this... But thought if it were rancid, I could save the trouble of asking/posting, here... But to my surprise, it was just as fine as could be. The surface hadn't even been touched! (I'm SO thankful that little furry green coconut babies didn't come oozing out..!! &amp; I'll bet I've just stirred my dear old Dad's soul when I too, noticed that it looks just like a tub o' lard! ) Sorry, I don't mean to delay my point, or question, rather. I'm just in one of those writing modes, I guess... 

So my question is: No harm in trying it out... Is there? Even being "aged", as it is? It doesn't smell like anything at all, but when I dipped some out into a smaller container &amp; rubbed it into my hands and arms it got a light coconutty sweet smell to it, but not strong at all... Quite pleasing, really. Not at all rancid, sour or otherwise spoiled. I almost feel silly even asking, now that I've tested it out topically... &amp; I suppose, if nothing else, I could make some kind of skin preparation from it! But since I've gone and typed all this out .... Maybe it will save someone else from having to ask. Or... Otherwise let the world know that it is probably ok to use even "aged" for... Ok, 2007, is when he floated on outta here, so... I'd give a likely guess at probably 6 or 7 years old, now. That's quite a long shelf life! Only due to its appearance, am I almost already comfortable with its future use, but, really, I know nothing about any kind of longivity for its health benefits to remain... I still value the opinion of an expert or knowledge of experience... Whichever... 

So, please, do let me know if you see any adverse reasons for using this product!!! While I can't yet see myself spreading it on my toast, I don't forsee any harm if I were to swish it and spit it! I must say, it feels good to have that feeling of, "I just KNEW I'd find a use for ~that~.. someday! " I Thank you so much in advance for your consideration, and subsequent opinion/advice.

Given that the recommended dosage is 2-3 tablespoons a day is that normal and healthy? I am just a bit apprehensive about all that fat.

<description>[YEA] Patty from Naalehu, Hawaii writes: "Aloha, we are a family that are in the coconut business in Hawaii. We have been harvesting and processing coconuts for over 20 years. We sell fresh chopped up ripe coconut at a weekly farmer's market, and also make a yummy coconut candy, simmered with raw sugar.

Before coconut oil had made such a comeback, we always knew it was good. When we are chopping the fresh ripe coconut two or three days a week, we always make sure to eat some.

Anyway, I have now incorporated the oil also in to our diet, as my husband has been diagnosed with early Alzheimers. (Yes he ate coconut, but probably not enough to keep it at bay)

I just put in on toast in the morning with a bit of jam or honey.

As for myself, I am a 56 year old woman that has had coconut as a part of my diet all these years. I also have a different diet than my husband, he was raised local style, alot of good fish etc. but lots of meat and oils. Personally I have always said that it is the coconut that keeps me so full of energy and so healthy. (I also eat lots of local fruit and vegetables)

Coconut rules, I always knew that!
